A Kid Approved Lunch To Mix Things Up!

Looking to add a little spice to your life? These Buffalo Chicken Sandwiches are just what you need to break free from boring lunches. We like to mix things up at PenningHouse, and one of the best ways to do that is with our meals.

When you’re strapped for time, but still want to shake things up, try adding a a new flavor to the mix. We all have our own preferred level of spice, so you will need to judge this one for yourself. However, the spice level in this recipe is typically mild enough for younger taste buds but still exciting for teens and adults.

Note: If you find you’d prefer to tone it down, simply use unseasoned chicken, omit the chili powder, or opt for a sweeter sauce.

These sandwiches are a fun twist on classic buffalo wings without the mess! Tender chicken coated in a buttery buffalo sauce is tucked into soft buns and topped with creamy dressing and crisp veggies

Ingredients
  

  • 2 6 oz Packages Pre-cooked Southwestern Chicken Strips
  • 6 tbsp Unsalted Butter
  • 4 Garlic Cloves Minced
  • 4 tbsp Frank’s Red Hot Sauce (or mild buffalo sauce)
  • 2 tbsp Barbecue Sauce
  • 1 tsp Chili Powder Optional
  • 4 Hoagie Rolls or Brioche Buns
  • 1 cup Shredded Lettuce
  • 1/2 cup Blue Cheese or Ranch Dressing

Method
 

  1. In a saucepan over medium-low heat, melt butter. Add garlic and cook for 30 seconds. Stir in hot sauce, barbecue sauce, and chili powder.
  2. Add chicken strips to the sauce and simmer uncovered for 5 minutes until heated through and coated.
  3. Spoon chicken onto bun bottoms (allow excess sauce to drip off). Top with lettuce and a drizzle of dressing. Add bun tops and serve warm.

Alternative Options

  • Gluten-Free: Use GF buns or lettuce wraps.
  • Dairy-Free: Swap butter for olive oil and use DF ranch dressing.
  • Vegetarian: Substitute chicken with crispy tofu or chickpea patties.
  • Slider Version: Use mini buns for little hands.
