Breakfast quesadillas can be a surprisingly nutritious way to kick off your morning when made with thoughtful ingredients. Here’s why they’re a smart choice:

Breakfast Quesadillas

Start your morning with crispy flour tortillas filled with fluffy scrambled eggs, melted cheese, and savory bacon. These quesadillas are a quick, crowd-pleasing breakfast that can be customized to suit any taste.

Ingredients
  

  • 2 Large Eggs
  • 2 Flour Tortillas
  • 2 Slices Cooked Bacon Turkey bacon, sausage (split in half), or veggies can be used instead.
  • 1/2 cup Shredded Monterey Jack Cheese
  • Salt & Pepper To Taste
  • Salsa or Sour Cream Optional, for dipping

Method
 

  1. In a skillet over medium heat, cook bacon to desired crispiness. Note: You can also substitute breakfast sausages or veggies (see alternatives).
  2. In a separate skillet, scramble the eggs with a pinch of salt and pepper. Remove from heat and set aside.
  3. Use a paper towel to wipe the skillet clean. Spray the pan with cooking spray or melted, unsalted butter to coat. Heat one tortilla until it is warm, but not toasted, then flip.
  4. Sprinkle half the cheese on the tortilla, then layer scrambled eggs and bacon. TIP: Sprinkle some cheese around the edge of the tortilla to help "seal" the second tortilla in the following step.
  5. Top with remaining cheese and second tortilla. Cook until cheese begins to melt, about 1 minute.
  6. Carefully flip and cook until golden brown.
  7. Slice into quarters and serve with salsa or sour cream.

Notes

Alternative Ingredients

  • Swap bacon for sautéed mushrooms or spinach for a vegetarian version.
  • Use whole wheat tortillas for added fiber.
  • Try cheddar, pepper jack, or dairy-free cheese for different flavor profiles.
  • Add avocado slices or black beans for extra richness and protein.
