Method
- In a skillet over medium heat, cook bacon to desired crispiness. Note: You can also substitute breakfast sausages or veggies (see alternatives).
- In a separate skillet, scramble the eggs with a pinch of salt and pepper. Remove from heat and set aside.
- Use a paper towel to wipe the skillet clean. Spray the pan with cooking spray or melted, unsalted butter to coat. Heat one tortilla until it is warm, but not toasted, then flip.
- Sprinkle half the cheese on the tortilla, then layer scrambled eggs and bacon. TIP: Sprinkle some cheese around the edge of the tortilla to help "seal" the second tortilla in the following step.
- Top with remaining cheese and second tortilla. Cook until cheese begins to melt, about 1 minute.
- Carefully flip and cook until golden brown.
- Slice into quarters and serve with salsa or sour cream.
