When we really want something fresh, I break out the bread maker and make my own dough. Today, though, we’re going to simplify things for a quick and tasty lunch recipe of a familiar favorite.

Mini Pizza Muffins
Ingredients
Method
- Preheat oven to 375°F (190°C). Grease or line muffin tin.
- Mix dry ingredients in a bowl: flour, baking powder, garlic powder.
- In a separate bowl, whisk the egg and milk. Add to dry mix and stir until just combined
- Fold in cheese and toppings, reserving some for garnish.
- Spoon batter into muffin cups, filling ¾ full.
- Top each muffin with a dab of pizza sauce and a sprinkle of toppings.
- Bake for 18–22 minutes until golden and cooked through.
- Cool slightly and enjoy warm!
