Mini Pizza Muffins

These bite-sized pizza muffins are warm, cheesy, and full of customizable flavor. The doughy base holds all your favorite toppings in a fun muffin-shaped twist that feels more like crafting than cooking.

Ingredients
  

  • 1 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Garlic Powder
  • 1 Large Egg or Flax Alternative
  • 3/4 cup Milk Dairy or Oat/Soy
  • 1 cup Shredded Mozzarella
  • 1/2 cup Pizza Sauce
  • 1/2 cup Chopped Toppings Pepperoni, Olives, Bell Peppers, Mushrooms, Cooked Sausage, etc.
  • Olive Oil Spray or Muffin Liners

Method
 

  1. Preheat oven to 375°F (190°C). Grease or line muffin tin.
  2. Mix dry ingredients in a bowl: flour, baking powder, garlic powder.
  3. In a separate bowl, whisk the egg and milk. Add to dry mix and stir until just combined
  4. Fold in cheese and toppings, reserving some for garnish.
  5. Spoon batter into muffin cups, filling ¾ full.
  6. Top each muffin with a dab of pizza sauce and a sprinkle of toppings.
  7. Bake for 18–22 minutes until golden and cooked through.
  8. Cool slightly and enjoy warm!
