This no-bake Leprechaun Popcorn Mix is a festive St. Patrick's Day snack made with popcorn coated in green chocolate and mixed with marshmallows, pretzels, and green candies for a sweet and crunchy treat kids will love.

Ingredients
  

  • 8 cups popped popcorn (plain or lightly salted)
  • 1 cup white chocolate chips
  • Green food coloring
  • 1 cup mini marshmallows
  • 1/2 cup green M&M’s or other green chocolate candies
  • 1/2 cup pretzel sticks or mini pretzels
  • 1/4 cup green sprinkles

  • 1 Large Mixing Bowl
  • 1 Microwave-safe bowl (for melting the chocolate)
  • 1 Spoon or spatula for stirring
  • 1 Baking sheet
  • Parchment paper or wax paper

Method
 

  1. Prepare the popcorn. Place the popped popcorn in a large mixing bowl and remove any unpopped kernels.
  2. Melt the chocolate. In a microwave-safe bowl, melt the white chocolate chips in 20–30 second intervals, stirring between each until smooth.
  3. Make it green. Add a few drops of green food coloring to the melted chocolate and stir until you get a bright green color.
  4. Coat the popcorn. Drizzle the green chocolate over the popcorn and gently toss to coat.
  5. Let it set. Spread the popcorn mixture onto parchment paper and allow the chocolate to harden for about 10–15 minutes.
  6. Break apart and add mix-ins. Once set, break the mix into clusters and stir in the marshmallows, pretzels, green candies, and sprinkles.
