Ingredients
  

  • 1 1/3 cups All Purpose Flour
  • 1 tbsp Brown Sugar
  • 1 tbsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/4 tsp Ground Ginger
  • 1/8 tsp Ground Cloves Optional
  • 2 Large Eggs
  • 1 cup Pumpkin Puree (not pie filling)
  • 1 3/4 cups Milk
  • 1/4 cup Melted Butter or Neutral Oil
  • 1 tsp Vanilla Extract

Method
 

  1. Preheat waffle iron.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and spices.
  3. In another bowl, beat eggs, then mix in pumpkin, milk, melted butter, and vanilla.
  4. Combine wet and dry ingredients until just mixed (don’t overmix).
  5. Grease waffle iron if needed. Pour batter and cook according to your waffle maker’s instructions (usually 3–5 minutes).
  6. Serve warm with your favorite toppings.

Storage & Reheating Tips

  • Storage: Let waffles cool completely. Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
  • Reheating: Toast in a toaster or toaster oven for crisp edges. Microwave for 30–45 seconds for a softer texture.

  • Flour: Use whole wheat flour or a 1:1 gluten-free blend.
  • Milk: Substitute with oat, almond, or soy milk.
  • Eggs: Replace with flax eggs (1 tbsp flaxseed meal + 3 tbsp water per egg) for egg-free.
  • Butter: Use coconut oil or vegan butter for dairy-free.
  • Sweetener: Swap brown sugar with maple syrup or coconut sugar.
