Freezer-Friendly Breakfast Sandwiches

A quick, nourishing solution for busy mornings. Sandwiches are layered with protein-packed eggs, melty cheese, and savory meats or veggies, all tucked into a toasted English muffin. They can be made ahead and ready in minutes.

Ingredients
  

  • 18 Eggs
  • 18 English Muffins Split
  • 1 lb Lunch Meat Turkey, Ham, or Sausage Patties
  • Salt, Pepper, or Onion Powder Optional, To Taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Whisk eggs with seasoning and pour into a greased baking pan. Note: The smaller your pan, the thicker your egg portions will be.
  3. Bake for 10–15 minutes until set. Let cool and cut into squares.
  4. Layer egg square, cheese slice, and meat onto one half of each English muffin.
  5. Top with the other muffin half.
  6. Wrap each sandwich tightly in tin foil, parchment paper, or plastic wrap.
  7. Store in a freezer-safe bag or container.
  8. Remove outer wrapping. Microwave for ~90 seconds, flipping halfway. Let cool for 1 minute before eating.

Note: If adding vegetables, remove as much moisture as you can before assembling your sandwich and freezing.
