Layered Taco Rice Casserole

This easy casserole combines seasoned ground beef, rice, beans, and cheese into a satisfying, crowd-pleasing dinner. It’s customizable, freezer-friendly, and uses pantry staples, making it ideal for feeding a large family without breaking the bank.

Ingredients
  

  • 2 lbs Ground Beef or Turkey
  • 2 cups Uncooked White Rice Brown rice can be used, but it will increase the cooking time
  • 1 Large Onion Diced
  • 2 Cloves of Garlic Minced
  • 1 Packet of Taco Seasoning Homemade blends also work well
  • 1 can (15 oz) Black Beans Drained and Rinsed
  • 1 can (15 oz) Corn Drained
  • 1 can (15 oz) Diced Tomatoes With Juice
  • 2 cups Shredded Cheddar or Mexican Blend Cheese
  • 1/2 cup Sour Cream Optional
  • Salt & Pepper To Taste
  • Fresh Cilantro, Avocado Slices, or Chopped Green Onions Optional

Method
 

  1. Cook rice according to package instructions. Set aside
  2. Brown ground beef in a large skillet over medium heat. Add onion and garlic; cook until softened. Stir in taco seasoning and diced tomatoes. Simmer for 5 minutes.
  3. While your skillet contents are simmering, preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  4. Spread half the rice on the bottom of the baking dish. Top with half the beef mixture, beans, corn, and cheese. Repeat layers with remaining ingredients.
  5. Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
  6. Top with sour cream and garnish if desired. Serve warm.
