Line a large baking sheet with parchment paper
In a medium bowl, mix nut/seed butter, maple syrup, coconut oil, vanilla, and salt.
Add oats and chocolate chips. Stir until combined.
Use a spoon or ice cream scooper to scoop out equal portions of the mixture. Use your hands to roll mixture into balls before placing each on the baking sheet.
Place baking sheet in the refrigerator for a couple hours to overnight, to firm them up before eating.
Please keep them in the fridge to keep them fresh and formed, until ready to eat.
